Pumpkin Spice Bead

This Pumpkin Bread is so delicious you'll want to make it all year round! Feel free to experiment with nuts, seeds, dried fruit, etc. in place of, or in addition to, the chocolate chips.

Ingredients

  • 3 cups  Flour
  • 2 cups Sugar
  • 2 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1 tsp Cinnamon
  • 1/2 tsp salt Optional
  • 1/2 tsp Pumpkin Pie Spice
  • 2/3 cup Canola Oil Grapeseed Oil is great for baking
  • 1 15 oz Can Pumpkin
  • 3 Eggs Lightly beaten
  • Dark Chocolate Chips, raisins, nuts, semi-sweet mini chocolate chips, dried cranberries Optional

Instructions

Preheat oven to 350 degrees F

  1. Mix dry ingredients in a large bowl
  2. Mix wet ingredients in a medium bowl
  3. Fold wet ingredients into dry ingredients until blended
  4. Add optional ingredients of your choice. We Love Dark Chocolate Chips!

  5. Spoon into 2 (9x5) lightly greased loaf pans
  6. Bake 1 hour
  7. Cool at least 10 minutes, then remove and

    cool on baking racks
  8. Slice and ENJOY!
  9. Will Yield 2 Loaves.

Recipe Notes

My family  loves the many different Thanksgiving Side Dishes, but this one is a family favorite. My daughter made it for me and I enjoyed it so much I made it a few months after the holiday. Why wait a year for something so delicious? I bake the 2 loaves and freeze one for when I have company.
