This is a great recipe to start adding more vegetables to your diet.
Heat olive oil in a large pot over medium-high heat. Add onions and garlic and sauté until cooked and golden, 8-10 minutes.
Add Butternut Squash, Kale, chili powder, cumin and crushed red pepper. Continue stirring for 4-5 minutes.
Add Cannellini Beans, Chick Peas, Vegetable Broth, and Tomatoes and Juices. Bring to a boil and then lower heat.
Simmer uncovered for about 20 minutes until Butternut Squash feels cooked.
Stir in Spinach and keep simmering until spinach is cooked.
Serve while nice and hot.
Sprinkle some Homemade Cheddar Cheese on top if desired.
