Yummy Salad as a substitute for tuna or chicken salad. Use as a scoop on a salad or in a sandwich
Ingredients
For The Dressing

Vegan Mayonnaise

Apple Cider Vinegar

Dried parsley

Dried chives
one of my favorite additions -

Dried Italian seasoning

Dehydrated onion powder or onion powder

Garlic powder

Everything bagel seasoning
For The Chickpea Salad
- 19 oz can Chickpeas (Garbanzo Beans), rinsed and drained
- 2 ribs Celery, diced
- 1/4 cup Chopped red or white onion
As a Sandwich

Large
Red or romaine lettuce leaves

4 Vegan bagels, whole grain wraps or 8 slices whole grain bread of choice
Instructions
For Dressing—
-
Mix together all the dressing ingredients in a bowl until well blended together.
For the Chickpea Salad—
-
In a separate bowl, add the chickpeas and mash with a fork or potato masher. Mash to your preferred consistency and don’t hesitate to leave them all whole. Add in the celery and onion, and stir to combine.

Add the dressing, and mix together until all dressing is combined with chickpea mix.

Add more seasoning if desired

Put a Scoop of the chickpea salad on a Salad of mixed greens.

Or use in a sandwich. Layer onto bagel, wrap or breadwith lettuce. Enjoy!
