Double Bean Butternut Squash Chili
2 Bean Butternut Squash Chili
This is a great recipe to start adding more vegetables to your diet.
Ingredients
- 1 1/2 tbsp Olive Oil Extra Virgin olive oil preferred
- 1/2 cup Chopped Onions
- 3 cloves Garlic
- 3 cups Chopped Butternut Squash Squares 1/4 to 1/2 inch pieces
- 1 cup Fresh Kale Hard stalks removed
- 1 tbsp Chili Powder
- 1 tsp Cumin
- 1/4 tsp Crushed Red Pepper Add more to suit your spicy taste
- 1 15 oz can White Cannellini Beans Rinsed and Drained
- 1 15 oz can Chick peas (Garbanzo Beans) Rinsed and Drained
- 1 1/3 cups Vegetable Broth
- 1 14 oz can Chopped Tomatoes and Juices
- 3 - 4 cups Fresh Spinach
- Vegan Cheddar Cheese Optional
Instructions

Heat olive oil in a large pot over medium-high heat. Add onions and garlic and sauté until cooked and golden, 8-10 minutes.

Add Butternut Squash, Kale, chili powder, cumin and crushed red pepper. Continue stirring for 4-5 minutes.

Add Cannellini Beans, Chick Peas, Vegetable Broth, and Tomatoes and Juices. Bring to a boil and then lower heat.

Simmer uncovered for about 20 minutes until Butternut Squash feels cooked.

Stir in Spinach and keep simmering until spinach is cooked.

Serve while nice and hot.

Sprinkle some Homemade Cheddar Cheese on top if desired.
